Status Update

I can’t tell you it’s been easy for me to follow rules when I’m a busy SAHM. And it’s definitely been a little difficult during the coronavirus outbreak, with shopping limitations and anxiety snacking.

But I’ve been truly enjoying the recipes from this book. Some of my favorites are the Bacon and Caramelized Onion Egg Muffins, the Cheesy Ground Beef Skillet, and the One-Pan “Spaghetti” and Meatballs.

And I just love that I don’t have to completely cut carbs.

I’ve found myself meal planning like never before and it has made things so much easier for me. I control what I eat better by balancing my daily intake. It has also affected how I shop, how I cook, and how I spend my time. I feel so much healthier and energized.
